Visiting SiCX Kyoto Distillery — A Conversation on Craft and Philosophy
In selecting the gin for our event, we made a point of visiting SiCX Kyoto Distillery in person to speak directly with the distillers behind the spirit.
At SiCX, the guiding philosophy is clear: to prioritize the natural aroma and structure of each botanical. Rather than relying on artificial flavorings or excessive additives, their approach is one of restraint—carefully drawing out depth and clarity through thoughtful distillation.
What stood out most during our visit was their intention not to simply replicate European distillation traditions, but to reinterpret them through the lens of Kyoto’s sensibility and natural environment. The result is a gin marked by quiet transparency and balance—qualities that resonate deeply with the spirit of Japanese tea and the idea of time spent in focused self-reflection.
When paired with the bitterness and umami of Shujinkoh matcha, SiCX’s gin becomes more than a drink. It serves as a moment of concentration and reset—an understated companion before and after moments of challenge.
Our time at the distillery reaffirmed why this collaboration felt inevitable: a shared belief in craftsmanship, restraint, and meaning beyond the product itself.
